At The West Bean, we spend all of our time behind the roaster. We have to—because we micro-batch each roast. We produce smaller quantities, but what we lack in volume, we believe we make up in taste. For each bean variety we create a “recipe”—an amalgamation of bean temperature, roaster drum speed, air-flow, and heat variations throughout the roast. A recipe can sometimes take days for us to get just right. When it is just right, and only then, is it available at our West Bean Store.
