Every step of the process will influence the end taste. By respecting the overall process and how the green coffee made it into our hands, we make it our responsibility to explore each varietal by diving deeper and deeper into the intricacies of the roasting process. It is only when the coffee is skillfully roasted, that it has a chance to be prepared at the highest level, crafting a great cup. To us a cup of black coffee is colorful and complex in its own way. Beneficio Santa Lucila is a specialty coffee dry mill in Nueva Segovia, Nicaragua focused on providing transparency and farm traceability, as well as keeping the highest standards in processing, storing and quality control. At the mill, the Paguaga family cups all the coffees that are sent to them and separates them by quality and lot. This allows farmers who dedicate their time and effort into truly creating a specialty coffee to receive more for their craft. This coffee is actually from Lot 47 and is a perfect example of why coffees from the Santa Lucila mill have consistently been top finishers in the Cup of Excellence.
